How to store the cheese? What's its shelf life? |

Cheeses were made in a time when there was no cooling systems to be found! Making cheese was the way to keep milk for longer. So our cheeses can be stored in the fridge for months on end, however, the cheese will develop a stronger taste as it matures slowly. The best way to store our cheeses is in the fridge. Before storing in the fridge, take of the paper from the cheese and wrap in cling film. After you have cut the cheese, please wrap in cling film to prevent dehydration and mould development. If you leave the cheese unattended for a week or so, mould could develop on the outside and/or cut areas. If so, either wipe the rind or cut away the mould. The cheeses are still fine to be eaten.
