Do you pasteurize the milk? Print E-mail

Yes, we do pasteurize the milk. However, our method of pasteurization is called 'slow pasteurization' instead of the quick pasteurization used by large industrial cheesemakers. With the slow method, less damage is done to nutrients, proteins and the 'good' bacteria are not killed. Only the harmful bacteria are killed during the slow pasteurization process.
